Our Coonawarra Cabernet Sauvignon comes from old rich terra rossa soil; a permeable light clay, and averaging 50 centimetres depth over a limestone base. This allows water to drain freely, providing ample air and opportunity for the vine roots to explore and thrive.
Selected bunches were picked in the last week of April and gently crushed into open-top fermenters. After 12 days of fermentation, the wine was pressed into 30% new French oak Barriques and aged for 14 months thereafter. Made with minimal winemaking artefact before bottling to capture the essence of the vineyard. This wine will reward further cellaring and decanting.
