Sausage & Rocket Pesto Beans

This month, we’re pairing our Love Letter from McLaren Vale Fiano with a comforting bowl of Sausage & Rocket Pesto Beans, created in collaboration with another_food_blogger.

Our Love Letter Fiano is vibrant, textural and beautifully balanced, with lively citrus and gentle savoury notes that make it a natural companion to this hearty dish. The richness of the sausages and creamy cannellini beans is lifted by the peppery rocket pesto, while the wine’s bright acidity keeps every bite feeling fresh and inviting.

Simple enough for a weeknight yet full of flavour, this is the kind of meal that reminds us great food and wine don’t need to be complicated.

Sausage & Rocket Pesto Beans

Serves 2ppl

Prep = 8-10mins Cook = 12-14mins

Ingredients

4 x sausages

1 x 400g tin cannellini beans

1 x brown onion – diced

2 x cloves garlic – crushed

1 tbsp butter

Pesto

2 x cloves garlic

2 tbsp lemon juice

75g rocket

80-100ml olive oil

30g parmesan cheese

2 tbsp pepitas

salt

Essential Tools

  • Chef knives
  • Chopping board
  • Weighing/measuring utensils
  • Mini food processor/blender
  • Frying pan x 2
  • Spatula/wooden spoon

 

Method

1. Place all pesto ingredients (only ½ the oil) in food processor and blend, gradually adding remainder of oil until desired consistency

2. Sear the sausages on medium heat until brown – approx2/3mins

3. Place sausages in oven @ 180c for 8-10mins pending how thick they are

4. In a separate frying pan add the onion, butter and garlic. Saute on medium heat for 2-3 mins until onions are softened. Add tin of cannellini beans along with the liquid to the pan and cook for a further minute. Stir in ½ the pesto and cook for a further minute adding more pesto if desired. I personally like to add it all in 😉

 

5. Serve

 

Tips/Tricks

  • You can use shop bought pesto if desired and can also mix it up using basil pesto but I like the rocket version better for this
  • I recommend pork sausages or Italian sausages for the dish but you can use any sausages you desire!
  • The pesto can be made in advance so that dinner takes a matter of minutes when it comes to serving
  • For 4ppl I would use the same amount of beans, just cook extra sausages and maybe a side dish or some warm bread on the side!
