Our Lion's Den of McLaren Vale is sourced from a single vineyard in the foothills of McLaren Vale.
After hand picking whole bunches of our Lion's Den of McLaren Vale in early March our winemaker Elena Brooks gently crushed the fruit into open top fermenters. After a 12 day fermentation the wine was basket pressed into some new but predominantly older French Oak barriques, to then mature for a further 20 months in the same oak, before bottling with minimal winemaking artefact to capture the essence of the vineyard. Although ready to drink the Lion's Den of McLaren Vale will also reward cellaring and decanting.
