Our Sleeping Beauty rests on century-old Barossa vineyards, in the historic town of Gomersal. After hand-picking selected bunches of Grenache, Shiraz and Mataro in mid-March our winemaker Elena Brooks let the whole bunches ferment together in open top fermenters with ambient yeasts. The wine was hand plunged for 14 days, before basket pressing into old French and American Oak barriques, to then mature for
a further 24 months in the same oak, before bottling without fining or filtration to capture the essence of old-vine Barossa GSM. This vintage of our Sleeping Beauty of the Barossa GSM has a high level of natural acidity, and is bone dry and although ready to drink immediately it will also reward time resting in the cellar till awoken by love’s first sip.
