Wishing Clock of the Adelaide Hills Sauvignon Blanc 2018

Whole bunches from our most distinctive Sauvignon Blanc vineyard, Bill & Vicki Borchardt’s, in the heart of the Adelaide Hills, atop Teakle’s Hill at Woodside were hand selected and picked in the 2nd week of March in the cool of early morning then destemmed in small batches without crushing the fruit followed by gentle pressing.

The free run juice was then fermented in small stainless steel tanks between 12 and 14 degrees Celsius. This Wishing Clock has a high level of natural acidity, (7.04 grams per litre) a pH of 3.06, and although bone dry an alcohol of only 12.0%.

This Wishing Clock of the Adelaide Hills was bottled directly without fining with minimal filtration to capture the essence of the vineyard, a looking glass if you will, and is ready to drink immediately. Thanks Vicki and Bill, a wish come true.

Tasting Notes

The colour is bright, alive and luminous, with a tinge of golden-green straw that would only be noticed if it were not there. The nose is strident and pungent, but pitch-perfectly so. Green lychee and mint; Meyer lemon and Tahitian lime zest. This wine sings without shrill, and sings a pure and true voice of sauvignon blanc, as if it were a new discovery to us, hitherto untasted or smelled, awaiting our arrival.

The palate is rain-water fresh and quick-slick, like polished steel. The texture is super-clean and races to a pert and revivifying finish, leaving you with a tangy aftertaste of juicy wild green fruit and hints of salt and minerals. This white wine revitalises.  Such a clean, long and pure wine wants a good duelling partner: fresh and lively Thai salads; fish or prawn dumplings with too many dipping sauces and vinegars; a single, perfect, salt-water poached prawn…
